2 Halibut Filets (or other white fish, ie cod)
1 can Canellini Beans (or Northern Beans), drained and rinsed
1 Roma Tomato, seeded and diced
1 Lemon, sliced
Lay 2 pieces of foil flat and fold each in half. ReOpen foil and spray with cooking spray. Add half of the beans to each foil packet. Add half of the tomato. Place 1 fish on each foil packet. Top with lemon slices. Fold foil into packages by folding in half and then triple folding the 3 open edges to seal.
Heat in oven at 300 degrees for about 20 minutes or place above coals at campground and allow packages to “steam”. Fish is done when it flakes easily with a fork.
